I’ve already expressed my love of kale so it may come as no surprise that I want to use it in some of my favorite dishes…and that dish would be pasta. I recreated an amazing recipe from Yum Sugar and made it my own. My version is a little simpler and just as delicious!
I take minced garlic and then fry it in olive oil. Once the garlic is a light brown color, I throw in my kale, sliced mushrooms and season with Celtic salt and fresh ground pepper. I leave everything covered for a little under 10 min, until the mushrooms are cooked through.
While that’s all marinating, I make brown rice organic pasta bow ties.
Mix everything together and you have got an amazing and super fast lunch.
